Keep in mind that when adding extra stuff to your bike, you are adding extra weight, and can affect the handling adversely. They spend a lot of time designing a bike to be properly balanced front to back, and messing with that can sometimes be bad, though not always. Make extra sure that everything is tightened down (it never hurts to doublecheck from time to time), and secured properly, you don't want to have anything vibrating or flopping around and falling off.

I don't really like windshields (except in cold weather) since they tend to just buffet your head around - I always wear a full face helmet, which takes care of the majority of bugs and wind. I tend to like the way a bike looks stripped back without a lot of extra junk on it, but that's just me - motorcycles are as much about individuality as anything else, so whatever floats your boat!!
