On the left side of the carb is a plastic cap that the choke cable goes into. Unscrew that cap. Remove the spring and choke plunger.
Insert the new cable through the cap, then the spring. Hook the choke cable on the plunger and screw the cap back on the carb.

Why is it I cant seem to start my ATV? It starts after the shop but not when I get it home a few days later?

well just bring it in to your dealer. the new sportsman 500's have EFI so i don't know. well there could be a lot of problems with your engine. do you clean the air filter after riding in dusty conditions?? clean air equals happiness all around. dirt in a 4 stroke engine causes damage but not as much as in a 2 stroke. have you checked the spark plug? changed the oil?? a have you checked the battery to make sure the starter motor works??
