I have been looking into using an ATV rear end and then trying to either find or make hubs to be able to run normal car rims instead of the ATV rims. Could this be done with much ease?

Robert, I would say it sounds possible. I don't know enough about trikes to say for sure. I would imagine the hard part will be how to connect the car hubs to the ATV axle. The idea seems like alot of work...Motorcylce look like a small care, who make this?
The trouble with your plan is that most ATVs use solid rear axles (IE no differential) which would make it steer like an old Mac truck. If the Rebel was shaft drive then you could use an old car axle, but, alas its not. Have you ever considered what is known as a Voyager kit, which is basically big training wheels, I have seen a number of them on Harleys they look like conventional trikes until you look close.Edit add on:

Personally, Parkinson's Disease has started to kick my *** during the last 4 years, that's why one of my bikes has a sidecar. Velorex makes a nice small and light fiberglass sidecar that you could stick on the Rebel. Of course, it would severly cut down on your speed, but, it would be great around town doing errands.

your kidding right? the rebel is way to small for one thing. second atv axles to small and narrow. third how you going to rig up brakes?. and adapat it to the frame? well after all why am i even answering this? it can be done but it be dang silly to do this.Do you save gas money with a motorbike ?
