I am traveling From Edinburgh to London Luton on the 1st of May 2007 and returning on the 10th of May to Edinburgh from London Luton.

You need to buy a single ticket each way at £82.50, a GNER Standard Advance 2. It is far more expensive to book a return, which, as you say, will be over £300.
