Driving uphill/downhill on a slippery road?

First, take some really deep breaths. This will start to calm your nerves. Then start to mentally picture yourself doing great in Driver's Ed. Whatever that means to you. See your self doing everything easily and confidently with a big smile on your face.
See the instructor smiling at you and feel yourself doing a great job. Practice this often.

You'll be fine. Most cars are equipped with a brake the instructor can use from the passenger seat.

Why do people find it so difficult to stick to the rules of the road?

Just relax, you will be fine. Keep focus on the road, other drivers,( defensive driving), and lights, signs, etc. don't keep staring at the speedometer, it is better to go a touch slow than it is a touch fast. Don't worry, you have a teacher. All will be well.
